Beef Rendang is one of the famous and popular dishes in Thai cuisine, recognized for its unique flavors and delightful aroma. This dish is usually served with steamed rice and is made using fresh and aromatic ingredients.

To prepare Beef Rendang, you will need the following ingredients:

- 4 sliced shallots or red onions
- 6 cloves of garlic
- About 4 centimeters of fresh ginger, peeled and sliced
- About 4 centimeters of galangal or ginger
- 1 Fresno chili
- 2 serrano peppers
- 1 tablespoon of kosher salt and more if needed
- 1 to 2 tablespoons of red chili flakes, depending on desired spiciness
- 1 teaspoon of ground coriander
- Half a teaspoon of ground turmeric
- One-eighth teaspoon of ground cardamom
- One-eighth teaspoon of nutmeg
- 2 tablespoons of vegetable oil
- About 1.13 kilograms of beef chuck, cut into pieces about 5 centimeters
- Half a stalk of lemongrass, the lighter part, bruised with the back of a knife
- 1 can of coconut milk
- 1 heaping tablespoon of brown sugar
- 2 teaspoons of tamarind paste, or the grated peel of one lime and one lemon along with the juice of one lime
- Steamed rice for serving
- Fresh coriander and lime for garnish, if desired
Method for Preparing Beef Rendang
To prepare Rendang, first, place the shallots, garlic, ginger, galangal, peppers, and other spices in a blender and blend until it forms a paste. Then, heat the vegetable oil in a pot and add the paste. Sauté for a few minutes until the spices release their aroma.
Next, add the beef chuck to the pot and mix well with the spice mixture. Then add the coconut milk, lemongrass, brown sugar, and tamarind paste, and let it simmer over low heat for about 1.5 to 2 hours until the meat is tender and glossy. Finally, serve with steamed rice and garnish with fresh coriander and lime.
